Ingredients -

3/4 cup Fine durum whole wheat flour

1/3 cup of warm water

1/2 tsp vegetable oil

1/4 Cup of all purpose flour ( for dusting)

Method -

Ad the durum wheat flour to a large bowl. Add a bit of the warm water and mix until clumpy, add the rest of the water and knead the dough until it comes together. Once it comes together in a slightly tacky dough, knead for 5 minutes. It should be the consistency of play- do. Roll the dough into a smooth ball.

Split the dough and roll into small balls ( golf ball size)

Set up a rolling station. you will need a plate of all purpose flour, a plate to place your rolled out rotlis and a surface roll out the rotlis on.

Roll out your rotlis to 2mm thin.

Heat a nonstick pan over high heat until hot, Once hot turn the heat to medium - High. Lay one rotli down onto the skillet and cook for 45 seconds or until the dough starts to bubble and slightly brown. Flip and cook for another 45 minutes. If using gas turn the heat up to high and using tongs place the rotli onto the direct flame for 2 seconds each side until it puffs!

Immediately butter & Enjoy!
